CASUAL COOK

Brookfield opened for guests in 2005 and is the closest specialist school camps facility to Brisbane City. We host hundreds of schools camps, music camps, leadership and church retreats annually.
It is part of the Queensland Conference and Camping Centres (QCCC) which consists of a team of catering, cleaning, maintenance, outdoor education and management professionals striving to care for our guests with excellence in hospitality, service, partnership and outdoor instruction. Employing more than 120 people, QCCC is one of Queensland’s largest and most decorated Outdoor Education providers.

CATERING MANAGER

QCCC – Tamborine

Located only 30kms from the Gold Coast and 70kms from Brisbane, QCCC Tamborine has one of the best views available in Queensland with a sweeping 360-degree vista of Brisbane, Moreton Bay and the Scenic Rim Hinterland. With access to 50 acres of land, QCCC Tamborine offers modern accommodation, world-class catering and an extremely comfortable, versatile venue just 2km from the charming tourist village at North Tamborine. Further afield there’s easy access to the best of the Gold Coast’s attractions, including Theme Parks, beaches and recreation activities in breathtaking National Parks.

QCCC Tamborine is looking for a Catering Manager to lead the hospitality and catering aspects of the venue. A ministry of Queensland Baptists, QCCC Tamborine is a busy, 300+ bed Conference and Camping Centre catering to school groups through the week and a broad variety of weekend groups, operating most weekends. The position will be responsible for managing and supervising 4 kitchens preparing more than 100,000 meals annually within relevant industry and workplace health and safety guidelines.

To be successful in this role, you’ll need management skills and extensive experience in all aspects of catering, hospitality, and Food Safety. The role will involve hands-on food preparation as well as responsibility to set work schedules, order stock, oversee food prep & special diets and make sure we comply with health and safety restaurant regulations. You will ensure efficient restaurant operation, as well as maintain high production, productivity, quality, and customer service standards.

The role includes a generous (above Award) remuneration package.

The successful applicant will have:

  • An understanding of, and commitment to, the mission and ethos of Queensland Baptists.
  • Appropriate trade qualifications and/or extensive experience in fresh, high volume quality cooking.
  • Proven ability to plan menus with experience and skill in catering for diverse special dietary requirements while working within a budget.
  • A strong customer focus with good interpersonal and communication skills.
  • Staff supervisory experience.
  • An understanding and commitment to Occupational Health and Safety and Food Safety requirements.
  • A strong work ethic with the ability to work unsupervised as well as within a close team.
  • A current Queensland Working with Children Check (or the ability to quickly obtain)

APPRENTICE CHEF

QCCC – Tamborine

The successful applicant will participate in many of the key moments and events of camp life whilst achieving their chef qualifications, which takes the form of a chef ’s apprenticeship (Certificate III in Commercial Cookery SIT30816), mostly comprising on-the-job training in a busy kitchen and complemented by time with training specialists.

The purpose of the position is to prepare and maintain excellent standards of food preparation and presentation for a range of meal types and cuisines.

The position’s main tasks include:

  • Preparing a range of meals for guests of the venue, including, breakfast, lunch, dinner and snacks to a high standard.
  • Ensure menus, food standards, procedures and processes are followed.
  • Supervise and manage kitchen operations as required.
  • Be responsible for ensuring the cleanliness of the kitchen area is in line with current health regulation standards.
  • Plan for and order appropriate food/ingredients/equipment/utensils required for producing healthy, nutritious and safe meals.

No experience is required, but applicants must be passionate about cooking, interested in serving large groups and events, and participate in many of the key moments and events of camp life whilst achieving their chef qualifications.

Shared onsite accommodation can be provided in gender-specific formats, including own bedroom and access to meals onsite when available. The successful applicant will do more than just live onsite. They will be joining a group of people committed to create life-changing opportunities through excellence in hospitality and service.
